Las Vegas is a casino-host town, and the hardest Strip rooms keep tables off the public calendar for hotel guests and hosts. What does get released online appears on SevenRooms, Resy and OpenTable, and it goes fast.
Carbone Riviera, Gymkhana and Golden Steer are the ones that almost never show an open dinner table, while several big-name hotel rooms further down the list are more reachable than their reputations suggest. Before you set an alert
Does Biter book the table for me?
